A dry red wine made from 100% Carignan. The grapes were hand-harvested at night from the winery’s organic vineyard in Shfeya Valley, Carmel region. After destemming and crushing, the fruit underwent natural fermentation with wild yeast in small stainless-steel tanks, with manual punch-downs several times a day. Following fermentation, the wine aged for 14 months in large French oak barrels.
The wine shows a deep ruby-purple color with aromas of red and blue fruit, anise, and spices. Medium-bodied, with soft tannins and flavors of black, red, and blue fruit, licorice, and violet floral notes. The long, focused finish reveals hints of figs and subtle salinity.
