A dry organic red wine. 75% Syrah, 25% Cinsault.
The grapes were hand-harvested at night from the winery’s organic vineyard in Shfeya Valley in the Carmel region. Whole clusters were placed into a special clay vessel imported from Italy and underwent carbonic fermentation. The fermentation lasted 40 days, after which the grapes were pressed. The wine continued to age for 12 months. Certified organic wine.Kadim is a hot, dry wind blowing from the east in our region. In Hebrew, the word refers both to a geographic direction (east) and to a point in time (ancient). This dual meaning reflects the use of clay vessels in the winemaking process—an echo of early traditions, the Middle Eastern landscape, and the region’s climate.
