The name “Fumé” originates from the French word for “smoke.” The term “Fumé Blanc” was first used by Robert Mondavi—one of the most influential wine producers in the history of California winemaking—to distinguish barrel-aged Sauvignon Blanc from the same variety that had not undergone barrel aging. The toast of the oak barrels imparts subtle smoky notes to the wine, giving rise to the name.

100% Sauvignon Blanc. Yields are very low, both due to dry farming (non-irrigated viticulture relying solely on winter rainfall) and organic farming practices, which require crop thinning to maintain vine balance and grape health.
The grapes were hand-harvested at night from the organic vineyard in Shfeya Valley in early August 2021. The cold fruit arrived at the winery in the early morning hours and immediately entered the juice separation process. The juice underwent spontaneous fermentation and aged in barrels for six months on the wild yeast lees.
The wine shows a deep straw color and a medium body. Aromas of citrus fruit, green herbs, nectar, and guava. On the palate, flavors of citrus blossom and candied grapefruit peel emerge, followed by white fruit and minerality on a long, focused, and persistent finish.

What is organic wine?

The term “organic” is legally protected.
The word “organic” may be used on wine labels only when both grape growing and winemaking meet strict and clearly defined requirements.
Organic wine is made from grapes grown in vineyards free of toxins, synthetic materials, and genetic engineering. Vineyard management is carried out using ecological methods that protect people and the environment, preserve biodiversity in the vineyard, and maintain soil fertility.
Grape growing, vineyard practices, and winemaking are conducted with full transparency and under continuous supervision. Both the grape grower and the winemaker must be certified as organic producers by an authorized inspection and certification body. The IQC certification seal appears on the label and attests to compliance with all required standards.
