Natural sparkling rosé 2021

Sparkling wine in the ancient method (Method ancestrale) This is the first method in which sparkling wine was produced in a deliberate way. It is recorded for the first time in 1531 (long before Champagne). The method was developed by monks in the village of Limo in the south of France. The first fermentation is stopped by cooling the wine to a low temperature (at a precise stage in the fermentation), then the wine is bottled and then the fermentation continues in the bottle. 
The word "natural" refers to the fact that the fermentation takes place on  the wild yeast and that no sulfur has been added to the wine. In addition, no sugar was added as is done in the Champagne method.

Pet Nat Rose 2021
Made from 100% Petit Verdot grapes that were harvested by hand at night in the winery's organic vineyard in Shfeya valley. The grapes arrived at the winery early in the morning and began the natural fermentation process in stainless steel tanks. After several months the wine was bottled and continued to ferment in the bottle. In total, the wine went through a fermentation and aging process of 7 months. Serve cold, at a temperature of 4 degrees.

The term “organic” is legally protected.
The word “organic” may be used on wine labels only when both grape growing and winemaking meet strict and clearly defined requirements.

Organic wine is made from grapes grown in vineyards free of toxins, synthetic materials, and genetic engineering. Vineyard management is carried out using ecological methods that protect people and the environment, preserve biodiversity in the vineyard, and maintain soil fertility.

Grape growing, vineyard practices, and winemaking are conducted with full transparency and under continuous supervision. Both the grape grower and the winemaker must be certified as organic producers by an authorized inspection and certification body. The IQC certification seal appears on the label and attests to compliance with all required standards.
