יין מבעבע בשיטה העתיקה (Method ancestrale) זו השיטה הראשונה בה ייצרו יין מבעבע בצורה מכוונת. היא מתועדת בפעם הראשונה בשנת 1531 (הרבה לפני שמפיין). השיטה פותחה על ידי נזירים בכפר לימו שבדרום צרפת. את התסיסה הראשונה עוצרים ע"י קירור היין לטמפ' נמוכה (בשלב מדויק בתסיסה), לאחר מכן מבקבקים את היין ואז התסיסה ממשיכה בבקבוק.
המילה "טבעי" מתייחסת לכך שהתסיסה מתרחשת על שמרי הבר ושלא הוספה גופרית ליין. בנוסף גם לא הוסף סוכר כמו שעושים בייצור בשיטת שמפיין.

עשוי מ - 100% ענבי פטי ורדו שנבצרו בבציר לילי ידני בכרם האורגני של היקב בעמק שפיה. הענבים הגיעו ליקב בשעת בוקר מוקדמת והחלו את תהליך התסיסה הטבעית במיכלי נירוסטה. לאחר מספר חודשים היין בוקבק והמשיך לתסוס בבקבוק. יש להגיש קר, בטמפרטורה של 4 מעלות.

Organic wine ensures a wine free of toxins and rich in flavor, aroma, and color, as well as beneficial components such as antioxidants. It expresses the character of its growing region through taste and aroma, with strong potential for high quality and long aging.
What is organic wine?
The term “organic” is legally protected.
The word “organic” may be used on wine labels only when both grape growing and winemaking meet strict and clearly defined requirements.
Organic wine is made from grapes grown in vineyards free of toxins, synthetic materials, and genetic engineering. Vineyard management is carried out using ecological methods that protect people and the environment, preserve biodiversity in the vineyard, and maintain soil fertility.
Grape growing, vineyard practices, and winemaking are conducted with full transparency and under continuous supervision. Both the grape grower and the winemaker must be certified as organic producers by an authorized inspection and certification body. The IQC certification seal appears on the label and attests to compliance with all required standards.
