Rose 2021

A wine with a light copper color and medium body. Aromas of red, orange and yellow fruit, peach, watermelon, and summer flowers. In the mouth you feel flavors of citrus fruit and herbs.   At the beginning a slight sweetness is felt and at the end a pleasant bitterness that cleans the palate.

This is a gastronomic rosé that goes very well with food. The variety of different foods that Rose 2021 can match is the largest and most diverse among all our wines.

60% Grenache, 25% Mourvedre, 13% Syrah, 2% cinsaut. Crops are low and of very high quality both thanks to growing without irrigation (relying only on winter rains) and also because of organic growing that requires crop thinning to maintain the health of the grapes.

The grapes were harvested in the middle of August 2021, by hand at night in our organic vineyard in Shfeya valley. The cold grapes arrived early in the morning at the winery and immediately entered the process of separation and crushing. After soaking for several hours, the juice was separated from the skins and spontaneous fermentation began. The wine continued to age in barrels for 4 months on the lees of the wild yeast.

The term “organic” is legally protected.
The word “organic” may be used on wine labels only when both grape growing and winemaking meet strict and clearly defined requirements.

Organic wine is made from grapes grown in vineyards free of toxins, synthetic materials, and genetic engineering. Vineyard management is carried out using ecological methods that protect people and the environment, preserve biodiversity in the vineyard, and maintain soil fertility.

Grape growing, vineyard practices, and winemaking are conducted with full transparency and under continuous supervision. Both the grape grower and the winemaker must be certified as organic producers by an authorized inspection and certification body. The IQC certification seal appears on the label and attests to compliance with all required standards.
